While I do prefer yucca fries over potato fries there are unfortunately some nutrition facts that aren't that great. Or maybe some good fact depending on your diet. Yucca has around 3 times more calories than a regular potato. If your on a high calorie diet but trying to limit intake this might be perfect for you. I know a lot of runners who eat yucca for it's high calories. ALso it provides more fiber and is more filling. It really is a delicious food. Crispy on the outside and fluffy inside.
