Double-layer Matcha Cheesecake — A Simple No-Bake Recipe Using Matcha from Kyoto’s 300-Year-Old Tea House, Marukyu Koyamaen! Made with the premium Isuzu matcha, this cheesecake is rich, creamy and full of authentic matcha flavor!
Mold size: 15 cm in diameter, 6 cm in height
Ingredients:
-Cake base:
digestive biscuit 70g, melted unsalted butter 20g
-Rich matcha cheese batter:
cream cheese 100g, granulated sugar 25g, matcha powder 10g, whipping cream 100ml, lemon juice 15ml, gelatin 3g
-Light matcha cheese batter:
cream cheese 100g, granulated sugar 25g, matcha powder 5g, whipping cream 100ml, unsweetened yogurt 50g, gelatin 3g
Tips:
1.Place the baking paper into the mold in advance.
2.Cream cheese should be softened at room temperature before use.

How to make:
1.To make cake base, add 70g digestive biscuit into a blender to crush and pour 20g melted unsalted butter to mix well, then transfer into the baking pan and press smooth.
2.To make rich matcha cheese batter, mix 100g cream cheese until smooth.
3.Add 25g granulated sugar and 10g matcha powder, mix well.
4.Pour 100ml whipping cream and 15ml lemon juice, stir well.
5.Soak 3g gelatin in cold water, then melt over hot water, pour into the cheese batter and stir well.
6.Pour the rich matcha cheese batter into the mold and smooth the surface, chill for 1-2 hours until set.
7.To make light matcha cheese batter, mix 100g cream cheese until smooth.
8.Add 25g granulated sugar and 5g matcha powder, mix well.
9.Pour 100ml whipping cream and 50g unsweetened yogurt, stir well.
10.Soak 3g gelatin in cold water, then melt over hot water, pour into the cheese batter and stir well.
11.Pour the light matcha cheese batter into the mold and smooth the surface, chill overnight.
12.Dust the matcha powder after unmolding.
