🍲 The Ultimate Comfort Khichdi
Prep time: 10 mins | Cook time: 15 mins | Serves: 2 👥
🛒 Ingredients
• The Base: ½ cup Rice 🍚 + ½ cup Moong Dal (Yellow Lentils) 🥣
• The Aromatics: 1 tbsp Ghee 🧈, 1 tsp Cumin seeds (Jeera) 🧂, a pinch of Asafoetida (Hing) 💨
• The Flavor: 1 chopped Onion 🧅, 1 Tomato 🍅, 1 tsp Ginger-Garlic paste 🧄, 2 Green chilies 🌶️
• The Spices: ½ tsp Turmeric 🟡, Salt to taste 🧂
• The Finish: Fresh Cilantro 🌿 & 3.5 cups Water 💧
👩🍳 Cooking Steps
1. Wash & Soak: Mix the rice 🍚 and dal 🥣. Wash them under cold water until clear 💧. Soak for 15-20 minutes if you have time!
2. Sauté: Heat ghee 🧈 in a pressure cooker. Add cumin seeds and hing. When they sizzle, add onions 🧅, ginger-garlic paste, and chilies 🌶️. Fry until golden.
3. Veggies: Toss in the tomatoes 🍅 and turmeric 🟡. Cook until the tomatoes get mushy.
4. The Mix: Add the soaked rice and dal. Stir for a minute to coat them in that liquid gold (ghee) ✨.
5. Pressure Cook: Pour in the water 💧 and salt. Close the lid. Let it whistle 3-4 times 🌬️ on medium heat for a soft, porridge-like texture.
6. The Reveal: Let the steam escape naturally. Open the lid, stir in fresh cilantro 🌿, and add an extra dollop of ghee 🧈 on top!
