ROTISSERIE CHICKEN CAESAR LETTUCE CUPS✨ an EASY, healthy, 10-minute, high-protein lunch that you can throw together in a pinch! I know lunch often gets put on the back burner as we rush through our to-do list but it’s so important to keep our bodies fueled throughout the day. I hope this recipe helps you accomplish that even on your busiest days 🫶🏻
Ingredients:
meat from 1 rotisserie chicken, shredded (or about 5 cups of cooked chicken)
1 bottle of your favorite caesar dressing (I used @getsidedish Miso Caesar)
1 1/2 cups of cabbage slaw mix (you may need to chop it up a bit)
1/2 cup slivered almonds (or chopped almonds)
1/2 cup diced green onion
salt and pepper to season
Romaine lettuce leaves for servings
Directions:
Add your chicken and about 1/2 your bottle of dressing to a medium sized bowl and toss until the dressing evenly coats the chicken
Taste and season with salt and pepper
Add the remainder of your ingredients and gently mix to combine, adding more caesar dressing until the mixture is coated with dressing to your liking
Serve on romaine lettuce leaves
