Recipe: Mint Chocolate Chip Ice Cream (Hand churn in bowl method)

3 Cups Heavy Cream
½ Cup Sugar
¾ Cup Chocolate Chips
1 tsp Peppermint Extract
½ tsp Vanilla
½ tsp Salt
Green Food Color if desired or just leave it out is what I usually do.

For the brine you will need:
2 Gallon Bags full with ice cubes
1 Qt Rock Salt

To perform this recipe you will need two bowels one will need to be about half the size of the other. The smaller bowel will need to be at least 6 cup capacity and the larger bowel will need to hold the smaller one with enough room for ice cubes all the way around between the two bowels. Start by filling the larger bowel half way full with ice cubes and add plenty of rock salt over the ice to promote melting as fast as possible. The faster the ice melts the colder the brine will be. As the ice is starting to melt place your cream into the smaller bowel and stir in the other ingredients thoroughly this is important to make sure the sugar is dissolved completely. After about fifteen minutes the brine water will have risen to the point that the ice is beginning to float if not add about a cup of water or as much as needed to get the smaller bowel to float in the brine water. For best results your brine solution should be between 0 degrees F. and 15 degrees F.
Churn the cream mixture with a rubber spatula scraping building ice cream ice crystals from the sides of the bowel as you churn, do this every 2 minutes until the cream starts to thicken to the point of being able to start holding shape. Once the cream starts to freeze well you will need to begin churning the ice cream every minute scraping it away from the sides as it freezes. The total churning time on this recipe if the brine is below 15 degrees F. should be less than one hour.
