Ingredients (serves 2–3):
Quail — 4–6 pcs
Olive oil or vegetable oil — 30 ml
Salt and black pepper — to taste
Paprika / thyme / rosemary — optional
Instructions:
Rinse the quail, remove the wing tips and tail ends.
Cut each quail along the breastbone and flatten.
Season with salt and pepper, add the oil, and rub well. Marinate for 20–30 minutes.
Heat a skillet over high heat.
Fry the quail skin-side down (inner side) for 6–7 minutes until golden brown, using a press for better browning.
Flip and press again for another 6–7 minutes.
Cover with a lid and cook for an additional 10–12 minutes until nicely browned, turning occasionally.
Remove from heat and let rest for 5 minutes.
Serving:
Serve hot with a side of roasted potatoes, vegetables, or a fresh salad.
