This week I am not cooking rather I am doing another knife sharpening video for a subber in England who asked me how to sharpen a large curved blade knife like the butchers scimitar. My subz contention was that using the Japanese style of sharpening stroke( • Knife Sharpening Demo Part 1 ) would wear the "belly" of the blade away!
