Ingredients (for about 15 big size muffins or 24 normal size cupcakes):
450 g whole wheat flour
2 eggs
4 apples, grated ( or 2 cups appelsauce)
1 large carrot, grated
1 glass coconut oil (or melted butter)
½ glass maple syrup or honey (add more if you prefer sweeter muffins)
2 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
Pinch of salt
Baking: preheated Oven 170*C - 20min.
