Ingredients:
300 gm Pineapple slices
Pinch of Salt
Large pinch of Sugar
Few drops of Lemon juice
Ghee (amount specified in method section)
8-10 Cashews (halved)
8-10 Almonds (chopped)
8-10 Pistachios (chopped)
1 cup Semolina (suji/rava)
3.25 cups Water (3 cups + 1/4th cup)
10-12 strands of Kesar (saffron)
1 tsp Elahchi powder (Green Cardamom powder)
3/4th cup Sugar
Methods:
1. Core out pineapple slices using a coin-size cookie cutter or bottle lid.
2. Coat pineapple slices with salt, a large pinch of sugar, and lemon juice.
3. Grill pineapple slices on medium-high heat until grill marks appear, caramelizing for enhanced flavour.
4. Chop grilled caramelized pineapple roughly, keeping it chunky, and set aside.
5. In a wok on low heat, fry halved cashews and chopped almonds until light golden brown. Set aside.
6. In the same wok, add 1-2 tbsp ghee and semolina, roast until aromatic and light golden brown. Remove and set aside.
7. In another wok on medium heat, add water, kesar, cardamom powder, and caramelized pineapple chunks. Bring to a boil.
8. Stream in the roasted semolina, stirring continuously to avoid lump formation. Cook for 4-5 minutes on medium-high flame.
9. Add 3/4th cup sugar, stir until sugar dissolves completely.
10. Add ghee in two batches, stirring and cooking until the kesari leaves the pan, and ghee has separated.
11. Mix in the roasted nuts. Your pineapple kesari is ready to serve hot, garnished with chopped or slivered nuts.
12. Optional: Add raisins according to preference. Adjust the nuts as desired.
