RAWA MASALA DOSA
Ingredients
1 cup fine semolina (rawa/suji)
¼ cup refined flour (maida)
½ cup rice flour
5-6 cashew nuts, chopped
1 inch ginger, finely chopped
½ tsp cumin seeds
¼ tsp crushed black peppercorns
1-2 green chillies, finely chopped
Salt to taste
Melted ghee for drizzling
Ready-made potato sabzi as required
Grated beetroot for sprinkling
Grated carrot for sprinkling
Gun powder for sprinkling
Chopped fresh coriander for sprinkling
Tata Sampann Garam Masala for sprinkling
Coconut chutney to serve
Sambhar to serve
Method
1. In a large bowl, add semolina, refined flour, rice flour and mix well. Add water little by little, mixing continuously. Add sufficient water to make a smooth and thin batter.
2. Add cashew nuts, ginger, cumin seeds, crushed black peppercorns, green chillies, salt, and mix well. Set aside for 20 minutes.
3. Add ½ cup water into the batter to adjust the consistency.
4. Heat a non-stick tawa, drizzle a little ghee on it and mix the batter and start pouring the batter on the hot tawa one ladle at a time till a dosa is formed. Drizzle a little ghee on top andcook for a minute.
5. Add a portion of ready-made potato sabzi and sprinkle grated beetroot and grated carrot. Sprinkle gun powder and sprinkle chopped coriander. Slightly mix and spread on to the dosa.
6. Sprinkle Tata Sampann Garam Masala and cook for a minute. Fold the dosa and cut in half. Serve hot with coconut chutney and sambhar.
