These Oatmeal Creme Pies are the perfect copycat of Little Debbie Cakes!! They just taste WAYY better 😄 Soft and chewy Oatmeal cookies with a fluffy vanilla buttercream filling 😋😋 #copycatrecipe
INGREDIENTS:
1 1/2 cups ap flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 cup unsalted butter (room temp)
1 1/2 tsp pure vanilla
2 cup rolled oats or quick cooking oats (don't use instant)
3/4 cup dark brown sugar
1/2 cup white sugar
2 lg eggs (room temperature)
1 TBSP Molasses (optional substitute: maple syrup)
Fluffy Vanilla buttercream:
1 stick unsalted butter (room temperature)
2 cups powdered sugar
1 tsp pure vanilla
2 TBSP heavy cream
pinch of salt
Cookies:
ADD flour, baking soda, cinnamon, and salt to a bowl. Whisk to combine. Add oats and stir. Set aside.
IN a large bowl, add butter and sugars. Cream til light and fluffy. Add eggs, vanilla, and molasses. Mix til combined.
ADD dry to wet mixture. Fold in with a spatula til incorporated. (Mixture will be thick.)
Line 2 cookie sheets with parchment paper. Scoop out 2 TBSP of cookie dough per cookie and place on cookie sheet. Keep them at least 3 inches apart. Cookies will spread and they need their space.
BAKE at 375 degrees for 10 minutes or until golden brown around the edges. Let cool 5 minutes on sheet, then remove and allow to cool completely on a wire rack.
Frosting:
Cream butter on low speed til light and fluffy. Sift in powdered sugar. Mix until it comes together and is creamy. Add vanilla and salt. Mix again. Add heavy cream and mix one last time. (Keep at room temperature until ready to fill the sandwiches.)
Using a small scoop, place 1 TBSP of frosting on bottom of cookie. Find a cookie that matches and cover. Repeat until all cookies are filled. Make 12 Oatmeal Creme Pies. Store in an airtight container for up to 5 days. Enjoy!!
