THE LEFTOVERS BOWL 🥗💛
The perfect “use-what-you’ve-got” nourish bowl — cosy roasted butternut squash and sprouts, lemony kale, shredded red cabbage, hearty grains, crunchy pecans + sunflower seeds, all finished with my fave maple-Dijon dressing. Comforting, vibrant, and so easy to throw together 🌿
What you’ll need:
• 2 tbsp olive oil
• Rock salt
• 1.5 tsp dried Italian herbs
• 1 tbsp lemon juice
• 1/2 butternut squash
• 200g Brussels sprouts
• 2 portions pre-cooked grains (I used spelt)
• 1/4 red cabbage
• Kale
• Handful pecans + sunflower seeds
Maple-Dijon dressing:
• 2 tbsp olive oil
• 1/2 tbsp apple cider vinegar
• 1 tbsp Dijon mustard
• 1 tbsp maple syrup
• 1 garlic clove, minced
• Salt + pepper to taste
How to make it (simple steps):
1️⃣ Preheat the oven to 180°C. Chop the squash into 1/4 circles and halve the sprouts. Toss both with olive oil, salt + Italian herbs. Roast — squash for ~30 mins, sprouts for ~15 mins.
2️⃣ Warm the grains. Shred the red cabbage. Massage the kale with the lemon juice.
3️⃣ Whisk together all dressing ingredients.
4️⃣ Build your bowl: grains → veg → kale → cabbage → drizzle with dressing → finish with pecans + sunflower seeds. Enjoy ✨
