EGGLESS, OIL FREE orange semolina (RAVA) cake is moist and delicious with a beautiful melt-in-the-mouth texture. It makes a lovely tea time treat or snack.
Semolina is the coarse, purified wheat middlings (intermediate milling stage) of durum wheat mainly used in making couscous, pasta, upma, and sweet puddings.The term semolina is also used to designate coarse middlings from other varieties of wheat, and sometimes other grains (such as rice or corn) as well.
This cake will keep well in an airtight container at room temperature for around 5 days.
INGREDIENTS
1 CUP SEMOLINA (RAVA)
1/2 CUP YOGHURT or CURD
1/2 CUP ORANGE JUICE
1/2 CUP SUGAR OF CHOICE
(I USED 1/3 CUP MAPLE SYRUP) its sweeter than regular sugar and healthy too
1/2 TSP BAKING SODA
1/2 TSP SALT
1 TSP ORANGE ZEST
FOR GLAZE
2 TBSP MAPLE SYRUP & 2 TBSP ORANGE JUICE
