Rice is a large part of Korean cuisine, and cooked white rice is especially the most commonly consumed type in our everyday life. As much as we love rice, we have many different ways to enjoy cooked rice and one of them is to mix any type of rice with different grains such as barley, red beans and chickpeas. I personally prefer this multigrain rice to plain because it provides richer flavors and more nutritious benefits.
But as you're aware that those Korean favorites are not allowed for us, so I found a good alternative, quinoa. Quinoa comes in several colors, all of which are low fodmap, so I simply purchase a pack of tri-color quinoa. To me, the combination of rice and quinoa is just perfect! Its nutty flavor is so satisfying!
In this video, I'll show you how to make cooked multigrain rice using white and brown rice with quinoa in an Instant Pot. The proportion of the ingredients is totally up to your taste. Actually, I change the ratio according to my appetite. :) The only thing is that I prefer to add a little bit more water to make rice softer and more digestible after I was diagnosed with IBS. I’ll show you how much water you need for both fluffy and softer rice.
Also, I'll share how to store extra cooked rice in the freezer. Since I eat at least a bowl a day, cooking extra rice is a big part of my meal prep for the following week. I usually freeze about a week’s worth of cooked rice and reheat them in the microwave when I want to eat. I guarantee that the rice is as fresh as it's just cooked!
In fact, this freezing method is very common in Korea and I can say everyone knows how to do. So basically, I made this video for those who don't usually or frequently eat cooked rice. Because I understand that it could be a burden to make a small portion of rice for just one meal. From my experience, frozen rice lasts up to 1 month, so you can make extra rice in your spare time and eat them anytime you want!
