Okay, so here's the science...

Piano Sample:
I sampled this jazz piano ballad snippet from vinyl w/ sp202 (hifi) n lowered the pitch. Sampled then to the sp303 in Stereo & LONG sample rate (I love this sample rate's sound on just about everything!).
I chopped this on-the-beat (in time with the sample) so each chop is the same length. When I was refining the Start / End marks I was listening more to what the bass & cymbals were playing than I was the piano.

Drums:
Sampled from vinyl w/ sp202 (standard) then to sp303 in Mono & LONG sample rate.

I have variations of the Drum Shots:
Strong Kick (Pad 6), Softer Kick (Pad 7)
Strong Snare (Pad 8), Softer Snare (Pad 4), Tom w/ Sn Roll (Pad 3)
Hat (Pad 5), Alt Hat (Pad 1) - the variation of the Hat is the same sound resampled to the pad above at the LO-FI sample rate - it's a subtle difference but how I approach recording the Hat pattern, I think it helps form the groove.

Pattern Sequencer:
Tempo = 87bpm
Length = 4 bars

With Quantize = 4 I first record the Sample Chops. Because I chopped the sample on-the-beat there's usually dope combinations of how to re-order those chops for your flip, with this part quantized it give you more freedom to get real loose with your drum's swing while the overall beat loops clean n doesn't feel like it's being pulled in 1000 different directions rhythmically.

Next, still quantized, I record just the first Kick / Hat of the pattern (bar 1, beat 1). This is hella important, it helps keep the pattern looping clean. You gotta have that 1st beat hit tight.

Before the Quantize police start throwing rotten vegetables at me, I turn it off n lay down a basic drum pattern, predominately the Strong Kick & Snare. Also the Hat on Pad 5 which is just playing on-the-beat.

This is where the beauty of having variations on your drum hit comes in mad useful, with the basic skeleton of the drum pattern recorded I can now throw around the alternate softer Kicks / Snares and experiment, then if I don't like it I can easily hit DEL and easily erase those variation drums without touching the main drum samples.

Same goes for the alternate Hat on Pad 1. I lay down the Pad 1 variation on the "up notes", the 8th notes between the on-the-beat Pad 5 Hat. If it's swinging too hard or not hard enough, it's easy to erase and redo - even just 1 beat if need.
Plus, because of the sample rate difference of the two hats, the Pad 5 hat hits with slightly more authority and if I want I can mix the level of the Pad 1 hat down or up to bring more or less attention to the swing.

Vinyl Sim:
Hold REMAIN + VINYL SIM to select all Pads.
For this I went for COMP just past 12 o'clock, not much crackle/noise & warp at like 10-11 o'clock.
If I want to compress it hard I'd recommend turning down the levels on the sample and hit hats, maybe snare, a bunch. Then you can crank that compressor to get that sound.

A note about how I chose my Tempo:
If you count along to each chop they have a "1-2-3" waltz feel.
With something like this I'd probably use just the "1-2" of it which gives me an idea of what the BPM of my flip will be.
For example, in my pattern I start with -
Pad 2 for 2 beats, then
Pad 3 for 1 beat, then
Pad 5 for 1 beat.
Record this pattern with Quantize On and you can then adjust the Time/BPM until it's even. THEN, sometimes you can speed it up just a little more and it starts to swing more. This is a classic Pete Rock & J Dilla technique, where you sample something that's in a 12/8 or 3/4 time signature and just use the first two counts.
