Rosticciana! A super rustic Tuscan rib dish. Each rib is cut into individual pieces and grilled over charcoal to get a beautiful char all the way around each rib and gives you a fantastic rib after only 20 minutes of cooking.
Marinade Recipe:
1 rack ribs (I used baby back but St. Louis will work fine)
1/2 cup EVOO
3 tbs red wine vinegar
3 cloves garlic (crushed)
2 sprigs parsley
Stems from 1 bunch parsley (rough chopped)
For basting:
1/2 cup EVOO
2 cloves garlic crushed
2 stalks rosemary
Cut ribs into individual pieces and place in a large ziplock bag. Add all other marinade ingredients and let sit in fridge for at least 4 hours.
In a separate bowl combine the oil and garlic for basting.
When ribs are ready to grill prepare grill and take ribs out of marinade. Pat some marinade off and season with salt and pepper.
Grill ribs on each side for 5 minutes, after each turn (every 5 minutes) use the two stalks rosemary dipped in garlic oil to brush each rib. To serve put on platter and drizzle any left over garlic oil over the ribs.
