Balushahi recipe made just like halwai style at home! This sweet is crispy from outside, soft and flaky inside, and soaked in perfect sugar syrup.

Ingredients:
• 2 cups maida
• ½ cup ghee
• 1 tsp baking soda
• Sugar syrup ( 1cup sugar + 1 cup
water)
• Cardamom
. Food color ornge
• Oil or ghee for frying
Make the Dough
1. In a bowl, mix flour and baking soda.
2. Add ghee and rub gently with fingers until crumbly.
4. Add little cold water if needed.
5. Do NOT knead too much. Just combine softly.
6. Cover and rest for 15-20 minutes.
Prepare Sugar Syrup
1. In a pan, add sugar and water.
2. Boil until 1-string consistency.
3. Ornge food color
4. Keep syrup warm (not very thick).
Shape Balushahi
1. Divide dough into small balls.
2. Flatten slightly and press thumb in center (make small dent).
Heat oil/ghee on very low flame.
2. Add balushahi and fry slowly.
3. Cook 10-15 mi.
es until goldenFry on low heat for flaky layers.
Soak in Syrup
1. Put warm balushahi in warm syrup.
2. Soak for 5-10 minutes.
3. Remove and let dry.
Tips for Perfect Balushahi
• Do not over-knead dough.
• Fry on low heat only.
• Syrup should no V too thick.
