Roasted Racked Lamb
ingredients:
Chopped Parsley
Thyme
Rosemary
Heavy Cream
Dijon Mustard
Whole Grain Dijon Mustard
Garlic
Salt & Pepper
Parmesan
Leek
White Wine
Port
Demi Glace
Directions:
Lamb Directions:
1 Put lamb racks in a pan, salt & pepper smear with garlic both sides. Smear
with dijon mustard, hit with thyme, rosmary, and parsley. Place in the oven
at 350 degrees for 18 minutes.
Cream Leeks:
1 Start cream leeks with butter in a pan. Next add leeks, salt & pepper. Let cook down.
2 Hit with whole grain dijon mustard. Then add white wine, let reduce.
3 Next add heavy cream and let that reduce as well.
4 Add fresh parsley when reduced. Dish into bowls and top with parmesan.
5 Place in the oven to gratinee.
Port Wine Sauce:
1 Pore a little port into the hot pan to deglaze, let port reduce.
2 When port is reduce add demi glace and let reduce while lamb is resting.
When lamb is done resting cut up and serve on plate. Drizzle some sauce on top
and parsley. Enjoy
