So, that’s Three Bangers and Mash by Tom.
Follow these simple steps, and you’ll make the best bangers and mash of your life!

INGREDIENTS
For the Sausages:
3 Italian sausages
3 Cumberland sausages
Oil (for cooking)
For the Mashed Potatoes:
4 baked potatoes
¼ cup milk (or adjust to your preferred texture)
½ block salted butter
Salt (to taste)
For the Onion Gravy:
2 red onions
2 white onions
4 garlic cloves (chopped)
Oil (for cooking)
2 tsp sherry vinegar
1 tsp demerara sugar
¼ cup white wine (plus extra for the chef 🍷)
Fresh rosemary (chopped)

INSTRUCTIONS
Mashed Potatoes:
Bake the potatoes: Roast whole, unpeeled potatoes with a bit of salt at 180°C for 1 hour.
Sieve for texture: Pass baked potatoes through a drum sieve for silky smooth mash.
Mix: Heat milk in a pan, then add sieved potatoes and butter. Mix until butter melts.
Season: Taste before adding salt, as salted butter may suffice.
Onion Gravy:
Caramelise onions: Chop onions and cook in a pan with a bit of oil for 20 minutes until golden (not burnt).
Add garlic & seasoning: Stir in chopped garlic, sherry vinegar, sugar, and rosemary.
Deglaze: Pour white wine, let it reduce, and set aside.
Sausages:
Sausages:
Pan: Heat oil, cook sausages on low heat until browned evenly.
Oven: Roast at 200°C for 30 minutes.
Serve together and enjoy!
