Описание: Pumpkin Prep Day + Motivational Story of the Empty Boat!
As fall comes to an end and winter starts to peek around the corner, it’s the perfect time to prep all the pumpkins lying around at home! In today’s video, I’m cutting, cleaning, portioning, and freezing multiple pumpkins — including a beautiful Cinderella pumpkin — and showing you how I make homemade pumpkin purée that you can use for variety dishes.

Along the way, I’ll also share a short but powerful motivational story: “The Empty Boat.” It’s a reminder to stay calm, stay focused, and not let life’s unexpected bumps shake our peace.

Baked Pumpkin Stuffed With Veggies & Cheese
A warm, comforting dish that looks beautiful on the table!
Ingredients:
1 small pumpkin (sugar pumpkin or pie pumpkin)
1-1.5 cups frozen mixed vegetables
½–1 cup shredded cheese (mozzarella or cheddar)
1–2 tbsp olive oil
Salt – to taste
Black pepper – to taste
Chilli flakes – ½ to 1 tsp (optional but adds great flavour)

For the Seasoning Rub
Mix together:
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp paprika

(This is brushed on the inside and outside of the pumpkin.)

Instructions:
Preheat oven to 350°F (175°C).
1. Prepare the Pumpkin
Wash and pat dry the pumpkin well.
Cut a lid on top
Scoop out all the seeds and fibres.
Brush the seasoning mixture generously inside and outside the pumpkin.
This gives shine, colour, and flavour.

2. Fill the Pumpkin with a mixture of veggies or corn, salt, pepper, chilli flakes.
(You can also add leftover rice, cooked beef, quinoa, or even pasta — it all tastes delicious.)

3. Bake
Place the stuffed pumpkin on a baking tray.
Bake for 35 minutes until the outside turns golden, The flesh becomes soft, and the cheese is melted and bubbly. Bake for additional 10 mins if required.

4. Serve
Let it cool slightly, then bring the whole pumpkin to the table.
