Taralli from Puglia – Original Recipe from an Italian Grandma

In this video I show how to make the famous Taralli from the South of Italy, Puglia. I show how to make the dough and how to bake those Taralli Pugliesi.
Ingredients for 100-120 Taralli
500g Flour Typo 0 or All Purpose Flour
200g White Wine
125g Olive Oil
8g fine Sea Salt
Procedure
Mix all ingredients to an elastic dough (around 20 minutes), form a ball and let it rest (air tight) for 30 minutes in the fridge.
In the meanwhile boil a bigger pot with salt water.
Now part the dough into two pieces and wrap one of the two parts again.
Shape the remaining part a bit round and cut it into small pieces.
Roll those small pieces until the rolls have a diameter of about 0,5cm. It could be, that you have to do this in multiple steps so that they have time to relax.
Cut the rolls into pieces of around 7cm length and shape now rings.
Put the always a small amount of rings into the boiling water. As soon the rings swim on the surface of the water, they are ready. Put them out an let them dry for around 10-15 minutes.
Do the same with the second half of the dough.
Pre-heat the oven to 180 degrees C with ventilation.
Put the rings onto a baking tray and bake them in the center of the oven for around 25-30 minutes, until they are golden.
