Restaurant Style Daal Makhni:
Ingredients
Black lentil 2cups
Kidney beans ¾ cup
Chopped onions 1
Boil ground tomatoes ¾ cup
Salt, pepper, turmeric as required
Ginger garlic paste 1tbsp
Butter ½ cup
Oil 2tbsp
Cream ½ cup
Ginger garlic 1tbsp
Coriander 2tbsp
Cumin 1tsp
Dried fenugreek 1tsp
Onion cut in rings to garnish
Method
In a pan heat oil and clarified butter add onions, ginger garlic and cumin then fry well. Now add boil tomatoes, ginger garlic paste, salt , pepper and turmeric and roast it. Now add boil lentil , red kidney beans and cook for 15 min. then add cream, dried fenugreek and cumin mix and simmer. Lastly dish out and garnish with onion rings, coriander and butter .
Bhay ki Karahi:
Ingredients
Boil bhay ½ kg
Onion sliced 1
Tomatoes 4
Red chili whole 6-7
Green chilies 6-7
Salt, pepper, turmeric as required
Ginger garlic paste 1tbsp
Clarified butter ½ cup
Coriander, cumin 1-1/2 tsp
Black pepper 1-1/2 tsp
Lemon juice 2tbsp
Coriander as required
Method
In a pan heat clarified butter add onions, boil tomatoes, red chilies, ginger garlic paste , cook till onion tender .now add salt. Turmeric and black pepper, and roast well. Now add bhay with ½ cup water and cook .lastly add coriander, green chilies lemon juice and simmer for few min and serve .
Vegetable jalfrezi:
Ingredients
Capsicum 2
Carrot 1
Boil green peas 1cup
Corn 1cup
Tomatoes 2
Coriander as required
Onion 1
Oil ½ cup
Butter 2tbsp
Ginger 2tbsp
Chopped onion 1
Cumin 1tsp
Salt, pepper, turmeric as required
Chopped tomatoes ¾ cup
Tomato ketchup 4tbsp
Mustard paste 1tsp
Method
Heat butter sauté carrots, green peas and corn, now sauté capsicum , onions and tomatoes, now heat oil in a pan sauté cumin, onion and ginger . now add tomatoes , salt, pepper, turmeric and roast . then add tomato ketchup , mustard paste and add saute veggies simmer 5 min , lastly add coriander and serve .
