I had a lot of brown rice to use up and that inspired me to make nutmeat to use as a filler for a vegan 'sausage roll' for our Christmas dinner (stay tuned for that video!). This is my very first attempt at making nutmeat, and I didn't follow any recipe!
Using only ingredients I had at home, my pendulum—and a bit of common sense—I experimented and came up with what I think is a winning recipe.
Note: This isn't a low-fat recipe—it's Christmas, so let's indulge! That said, it still offers plenty of healthy ingredients (and on hindsight, I think it would be pretty good even without oil).

Ingredients:
4 cups brown rice
1 cup dry roasted peanuts
1 cup dry roasted sunflower seeds
2 tablespoons dry roasted pine nuts
1 can lentils
1 can chickpeas
1 onion
3/4 cup flour (I used wholemeal)
1/2 cup vegan stock (or, like I demonstrated in the video, 1/2 cup hot water and then 1/2
teaspoon of stock powder added to the dry ingredients)
1/2 cup extra virgin olive oil (*optional—I think it would be good also without oil)
1 1/2 teaspoons garlic powder
2 teaspoons porcini powder
1/2 teaspoon mace
1/2 teaspoon pepper powder
2 tablespoons dry sage
1 1/2 teaspoons salt
