I ALWAYS. I'll repeat. I ALWAYS freeze my fresh-caught fish fillets for at LEAST 48 hours before eating. Doesn't matter whether freshwater or ocean (saltwater) fish, like this California halibut, freezing kills the parasites and worms that you DIDN'T see while cleaning the fish. 48 hours minimum, up to 7 days recommended - if you can wait that long 👍
