RECIPE:
1 Tbs canola oil
1/2 medium onion diced
1 lb Chicken Sausages sliced
1 tsp minced garlic
1 tsp dried parsley
1/2 tsp salt
1/4 tsp dried thyme
1 chicken broth
1 lb small potatoes halved (Or 3 cups of cubed larger potatoes)
1/2 cup milk
2 tablespoons corn starch
1/2 cup shredded cheese
Salt and pepper to taste
Turn the Pot to SAUTE/BROWN. Add the oil once the pot is hot.
Add the onion and cook until it is translucent. Stir in sausages, garlic, parsley, salt, and thyme and cook 1-2 minutes until sausage is beginning to brown. I recommend browning in batches.
Turn the Pot off, add the broth and potatoes and put the lid on.
Turn the valve to sealing, and select Manual (Instant Pot) or CHILI/BEANS (Crock pot express) for 2 minutes.
When the cook time is over, do a quick release. Turn the Instant Pot to saute.
Whisk together milk and corn starch and stir into pot, cooking for 1-2 minutes until thickened. Stir in cheese. Taste test as you will need to add more salt then for what the recipe calls for. Salt and pepper to taste. Serve.
