Today I’m sharing authentic 3kg Beef Bannu Pulao with rich yakhni and perfect long grain rice. This is dawat style recipe with full detailed method.
Step 1 – Yakhni (Pressure Cooker)
Pressure cooker mein add karein:
• 3 kg beef
• 4 whole onions
• 3 green chilies
• 2 inch ginger
• 8–10 garlic cloves
• 3 bay leaves
• 2 badam phool
• 10 green cardamom
• 4 black cardamom
• 10 cloves
• 2 tbsp black pepper whole
• 1 tbsp cumin seeds
• 3 tbsp coriander seeds
• 2 tbsp salt
• 14 glasses water (double from rice quantity)
Pressure cook for 40 minutes.
Strain yakhni.
Keep beef separate.
Step 2 – Masala Base
Patila mein:
• 3 cups oil
• 4 large onions (brown karein)
• 3 tbsp ginger garlic paste
• 5 tbsp green chili paste
• 5 tomatoes (cook till mash)
• 4 chicken cubes
• 10 whole red chilies
• 2 tbsp red chili flakes
• 1 tbsp roasted crushed cumin
• 3 tbsp crushed coriander
• 1 tbsp Chinese salt (optional)
• 1 tbsp salt
Cook well until oil separate.
Add cooked beef and mix.
Add 4–5 tbsp lemon juice.
Step 3 – Rice Cooking
Add strained yakhni and bring to boil.
Add 3 kg soaked rice.
Add handful mint and coriander.
Cook until water dries.
Cover and give dum for 15 minutes.
