This banchan may seem simple on its own, but when paired with other main dishes it transforms the meal, adding the perfect balance and flavor to every bite.
Ingredients
260g or 0.5lb mung bean sprouts
40g or 1.4oz carrot
2 stalks scallion
1 tablespoon sesame oil
3~4 tablespoons water
1 teaspoon salt
1/2 tablespoon fish sauce
1 tablespoon toasted sesame seeds
Instructions
1. Rinse the mung bean sprouts and drain well. Julienne the carrot into thin strips and slice the scallions.
2. Place the mung bean sprouts in a pan. Make a small well in the center, then add the carrot and a splash of water.
3. Drizzle with sesame oil and toss lightly to coat the vegetables.
4. Cover the pan with a lid and cook over high heat. Once it begins steaming, continue cooking for about 50 seconds.
5. Remove the lid and quickly transfer the sprouts and carrots to a tray. Spread them out so they cool evenly—use a fan if available for extra crunch.
6. Season with salt and fish sauce, then finish with a sprinkle of toasted sesame seeds before serving.
