What I learned about tacking challenges are look up into the direction of the turn, push away the mast with your front arm to create space for you to move into, at the same time pull and slightly tilt back on the boom with your back hand to help turn, step around the mast slightly early so you have backwind pressure from the sail to push against for stability. Practice a lot.
