Mango & Durian with Sticky rice
Top hit Thai's dessert
Ingredient & cooking method (very easy however the most difficulty is from the coconut juice temperature while cooking)
Ingredients
350 g. Sticky rice_(try to select the best quality available)
1,000 ml. Coconut milk
140 g. Sugar
2 1/4 tsp. Salt
100 g. loaf sugar
10 Pandan leaves
1 Mango
200 g. Durian
1 tsp. Beans
1 tsp. Rice flour
DIRECTIONS
1. Soak the sticky rice in water( swing with Alum) overnight or 12-15 hrs. after that drain all the water out and steam the rice (adding the pandan leaves).
2. (For the rice) Mix sugar and salt in coconut milk then cook it (well stir and do not let it come to boiling point).
3. Mix the cooked coconut milk with cooked sticky rice immediately.
4. (For coconut sauce/topping) Mix rice flour in the coconut milk and boil it (stir well).
5. (For Durian with coconut milk) Mix coconut loaf sugar, salt in coconut milk (adding pandan leaves) and boil (stir well). Adding durian meat afterwards.
6. Serving method - Mango with sticky rice, spoon the rice and top with coconut milk (4.) then top with beans on the rice and put the mango at the side.
Durian sauce with sticky rice, spoon the rice and top with the durian sauce.
Tips
Thai dessert with coconut milk, temperature is the importance. Do not over boil !
