Welcome to the heart of the Lezgin village! Today we are preparing one of the most beloved traditional dishes - tskan with cottage cheese. These are hearty flatbreads with a delicate filling of homemade cottage cheese, which are baked in a dry frying pan or in a tandoor. Simple village food, tested for centuries, and filled with the warmth of the mountains.
🥣 Ingredients for tskan with cottage cheese:
Wheat flour - 500 g
Water - 250 ml
Salt - 1 tsp.
Homemade cottage cheese - 400 g
A pinch of black pepper (optional)
Greens (onion, cilantro, dill) - to taste
👩🍳 Recipe:
Knead a simple unleavened dough from flour, salt and water. Let it "rest" a little.
Meanwhile, prepare the filling - mix fresh cottage cheese with finely chopped herbs and spices.
Roll out the flatbreads, put the filling inside, pinch and carefully roll out again.
Fry in a dry frying pan on both sides until golden brown.
Serve hot with village butter, ayran or herbal tea.
