TANDOORI FISH KABABS
Ingredients
400 gms rawas fish fillets
¼ cup mustard oil
1 cup hung yogurt
2 tsps green chilli paste
Salt to taste
1 tbsp ginger paste
1 tbsp garlic paste
¼ tsp turmeric powder
½ tsp dried fenugreek leaves (kasoori methi) powder
2 tsps lemon juice
2 tbsps gram flour (besan)
1 tsp Tata Sampann Garam Masala Powder
1½ tsps onion seeds (kalonji) + for sprinkling
2 tbsps melted butter
Onion rings for garnishing
Fresh mint sprig for garnishing
Green chutney for serving
Method
1. Heat mustard oil in a non-stick pan till it reaches smoking point.
2. Mix together hung yogurt, chilli paste, salt, ginger paste, garlic paste, turmeric powder and dried fenugreek leaves powder in a bowl.
3. Marinate fish fillets with salt and lemon juice.
4. Add gram flour to mustard oil, mix and sauté for a minute. Add this to the yogurt mixture and mix well.
5. Cut the marinated fish fillets into 2 inch cubes and add to yogurt mixture alongwith Tata Sampann Garam Masala Powder and mix well. Add onion seeds, mix well and set aside to marinate for 30 minutes.
6. Preheat air fryer to190˚C.
7. Arrange marinated fish pieces in the basket, sprinkle some onion seeds on top and air fry for 8 minutes.
8. Baste with butter, reduce the temperature to 180˚C and air fry for 5-6 minutes.
9. Garnish with onion rings, mint sprig and serve hot with green chutney.
