[Ingredients]
Sweet Fermented Rice:
Glutinous Rice 430g (2 Cups)
Rice Leaven 12g (1 Tbsp)
Glutinous Rice Balls:
Glutinous Rice Flour 120g (1 Cup)
Hot Water 110g (½ Cup)
Glutinous Rice Balls In Sweet Fermented Rice Soup:
Water 420g (3½ Cup)
Glutinous Rice Balls 430g (2 Cups)
Sweet Fermented Rice 140g (½ Cup)
Sugar 8g (2 Tsp)
Sweet Osmanthus Syrup 20g (1½ Tbsp)
Cornstarch 5g (2 Tsp)
Water 45g (3 Tbsp)
Steps:
Rinse the glutinous rice with water. Add water to soak for 8 hours, soak for 12 hours in the fridge in summer.
Line the steamer with cheesecloth. Add the pre-soaked rice. Bring the water to a boil and steam over medium-high heat for 40 minutes.
Rinse the rice with purified water to chill to 34-36C (or 93-97F).
Crush the rice leaven into small pieces, and add to warm water. Add the mixture to the steamed rice in a container and mix well. Make a well in the rice and sprinkle some crushed dry rice leaven on the top. Cover to keep warm at 32-36C (or 90-97F), do not be higher than 39C (or 102F)
Two days later, when the liquid in the well is about ⅗ full, it is done. Stir well and add more purified water to stop the fermentation process. Store in an airtight container in the fridge.
Glutinous Rice Balls In Sweet Fermented Rice Soup Recipe: Add glutinous rice flour in a bowl and pour some hot water to knead the dough. Roll into a long strip. Cut the strips into small doughs. Round the small doughs. Bring water to a boil in a pot, and add in the rice balls. After floating on the water, cook for 3 more minutes. Add the sweet fermented rice, sugar, and Sweet Osmanthus Syrup to taste.
