Baba Ganoush is a Lebanese dish that is always a super hit at home. it's a way of rediscovering eggplant. Baba Ganoush chutney prepared in the traditional way, it has a mild flavor that most people enjoy with a touch of sour (lemon), salty, and bitter (tahini) to keep it interesting.
Baba Ghanoush is smooth, thick, very filling, and is a healthy choice.
Ingredients:
Aubergine ( Eggplant or Brinjal) : 3 Large
Tahini ( Sesame ) : 2 Tbsp
Lemon Juice: 2 Tbsp
Olive Oil: 2 Tbsp
Garlic: 1 Clove
Mint: 2 Tbsp ( Chopped)
Salt: To taste
Black Pepper: 1/8 Tsp
Pomegranate: to garnish with
Method :
1)For Tahini paste, In a blender jar add tahini ( sesame seeds), garlic, lemon juice with water as required to make a smooth tahini paste.
2)Roast eggplant: the best way to cook eggplant is a barbeque or charging on a gas flame. this will bring out a strong smoky flavor. you can roast in the oven for 35 minutes.
3)Peel the roasted skin off eggplant and chop the flesh and then place it in a strainer for 10 minutes to drain excess water
4) now coarsely grind or could be whisked with a fork to achieve a rough texture. Be careful, do not blend to smooth paste.
5) Add salt, tahini paste, olive oil, salt, mint, black pepper, and mix well.
6) for garnish, pomegranate, mint, and olive oil can be used.
Can be enjoyed with pita bread, chapati, or cheese cracker.
Storage:
Consume within 24 hours.
