Ingredients:
1 kg chicken
1 kg mutton
1 kg boiled beef
1 cup cooking oil
4 onions, sliced & fried until golden
2 tbsp mixed whole garam masala
(cardamom, cloves, cumin, bay leaf)
1 tbsp ginger garlic paste
1 tbsp coriander powder
2 tsp red chili powder
1 tbsp Deggi Kashmiri red chili paste
2 tsp salt
1 cup yogurt
2 tbsp finely chopped ginger
2 tbsp khoya (dried milk) powder
2 cups milk
1–2 tbsp kewra water
1 tsp garam masala powder
1/2 tsp nutmeg & mace powder
Ajzaa:
1 kilo murghi
1 kilo mutton
1 kilo beef (ubla hua)
1 piyali cooking oil
4 adad piyaz (slice karke sunehri fry ki hui)
2 khanay ke chamach milay julay sabit garam masalay
(elaichi, laung, zeera, tez patta)
1 khanay ka chamach pisa adrak lehsan
1 khanay ka chamach pisa dhaniya
2 chaye ke chamach pisi lal mirch
1 khanay ka chamach Deggi Kashmiri lal mirch paste
2 chaye ke chamach namak
1 piyali dahi
2 khanay ke chamach adrak bareek kati hui
2 khanay ke chamach khoya powder
2 piyali doodh
1 se 2 khanay ke chamach kewra ka pani
1 chaye ka chamach pisa garam masala
1/2 chaye ka chamach jaifal aur jaotri powder
short Method: (English)
Heat oil in a large pot and add fried onions. Lightly crush the whole garam masala and add it to the pot. Add ginger garlic paste and sauté well. Now add coriander powder, red chili powder, Deggi Kashmiri chili paste, salt, and yogurt. Cook on medium heat until oil separates.
Add boiled beef, mutton, and chicken. Mix well and cook for a few minutes. Add chopped ginger, khoya powder, and milk. Cook on low flame until the gravy becomes rich and thick.
Finally add garam masala powder, nutmeg & mace powder, and kewra water. Give a gentle mix, cover, and simmer for 5 minutes. Turn off flame and serve hot.
Short Method (Roman Urdu)
Ek bari degchi me oil garam karein aur sunehri fry piyaz daal dein. Sabit garam masala halkasa koot kar shamil karein. Ab adrak lehsan paste daal kar achi tarhan bhunain. Phir dhaniya powder, lal mirch, Deggi Kashmiri mirch paste, namak aur dahi daal kar medium aanch par bhunai karein jab tak oil alag na ho jaye.
Ab ubla hua beef, mutton aur murghi shamil karein aur 2–3 minute bhunain. Ab adrak kati hui, khoya powder aur doodh daal kar halki aanch par pakayen jab tak qorma garha aur lazeez ho jaye.
Aakhir me pisa garam masala, jaifal jaotri aur kewra ka pani daal kar halkasa mix karein, dhak kar 5 minute dum dein. Garam garam serve karein.
