We are so very blessed. This deer meat was in trade for eggs. A great trade! Our friend actually gifted us with 2 deer this year.
I'm in the process of cleaning out our freezer, and decided to can up some venison, following the Ball canning book instructions for canning meat.
Please use the proper PSI, for your elevation. Pints process for 75 minutes, quarts for 90 minutes.
