When you reach 8 hearts with any NPC, they will send you a letter in the mail to initiate the 8 heart event. For Juniper, the letter comes with an extra step: collecting a "Breath of Flame" flower. If you do not have one, they can be found in the lava layer of the mines (60-80). Once you have acquired one, talk to Juniper wherever she is to initiate the event. You can either choose to stay as friends or begin dating, and in this video I showcase the dialogue options for the dating route. The cutscene is fundamentally unchanged otherwise.
Gotta say, I was NOT expecting... well, any of what happened.
