Fresh lumpia is a Filipino-version of fresh spring roll. It uses a crepe stuffed with sautéed mixed vegetables and topped with a special sweet peanut sauce. The secret to our fresh lumpia recipe is that we use milk for the crepe instead of just water and we add creamy peanut butter to our sauce. The sautéed vegetables are also seasoned with oyster sauce and chicken powder making the vegetable fillings more flavorful.

RECIPE
======

Wrapper Recipe: (makes around 24 pcs crepe)
8 eggs (large)
6 cups milk
4 cups flour
8 tbsp oil
2 tsp salt
Cook the crepe using low heat only. Use about 1/3 cup of the batter for each crepe you cook.

Sauce Recipe:
5 cups water
1/8 cup liquid seasoning
1-1/2 cup brown sugar
1 tsp salt
4 tbsp creamy peanut butter
About 12 heads fresh garlic
4-5 tbsp cornstarch
Ground peanuts for toppings later

Alternate Sauce Recipe using grams:
(I like to use this recipe because it is more precise)
1183g Water
60g Liquid Seasoning
300g Brown Sugar
40g-60g Fresh Garlic
5g Salt
80g Creamy Peanut Butter
56g Cornstarch
Ground Peanuts

Sautéed Vegetables:
1 lb - Jicama or “Singkamas” (julienne)
1 lb - Sweet Potatoes (minced)
1 lb - Carrots (julienned)
1/2 lb - Green beans
Garlic
1 large Onions
1/2 lb Shrimp
2 tsp Chicken Powder
1/3 cup Oyster Sauce
Salt and Pepper to taste

You may actually use different amounts of the vegetables you like. Just season it accordingly.
