Ingredients: For 4 to 5 servings
Gosht (haddi ke saath) (Mutton with bones) : 125 grams
Tamatar (Tomatoes): 2 (optional)
Bhendi (Ladys finger): 8 to 10 whole (do inch ke pieces kat kijiye/each cut horizontally into two)
Pyaz (Onions): 2 chopped
Adrak lehsan ka paste (Ginger Garlic paste): 1 tablespoon
Bareek namak (Salt): 2 teaspoons
Haldi powder (Turmeric powder): ½ teaspoon
Lal mirch powder (Red chili powder): 1 ½ teaspoon
Tel (Cooking oil): 2 tablespoons
Imli ka khatta (Tamarind water): 1 cup (soak handful of tamarind in one cup of water)
Kari patta (Curry leaves): a handful/2 tablespoons
Kat hua hara dhaniya (Chopped coriander): a handful/2 tablespoons
Sabuth hari mirchein (Whole green chilies): 4
Procedure:
1. Pressure cooker mein kati hui pyaaz, adrak lehsan ka paste, 2 teaspoon ya taste ke hisaab se namak, haldi powder, lal mirch powder, gosht, tel/oil aur 1cup pani/water daliye.
2. Achhi tarah se milakar dhakkan dhak dijiye (2 tamatar kate hue bhi is mein dal sakte hain). Chaar seeti/4 whistles aane tak ya gosht galne tak pakaiyye.
3. Tel chhootne tak/till the oil separates, ise bhuniye.
4. Bhendi ke do inch pieces cut karke daliye.
5. Aadha cup pani/1/2 cup water dalkar 2-3 minute tak medium aanch par pakaiyye.
6. Ek cup/1 cup imli ka khatta daliye (iske liye mutthi bhar imli ko ek cup paani mein bhigokar iska khatta nikal lijiye)
7. Teen cup/3 cups saada paani/plain water daliye.
8. Kari patta, kata hua hara dhaniya aur sabuth hari mirchein daliye.
9. Dhakkan dhak dijiye aur medium aanch par 2 minute tak pakaiyye aur 15 minute tak dheemi aanch par pakaiyye ke imli ke khatte ki kachhi boo door ho jaye.
Bhendi ka khatta salan tayyar hai. Saade chawal/plain rice ya roti aur koi bhi sukhe salan ke saath serve kijiye.
