DAIRY MILK SILK
Keep moulds clean and ready for use.
Place parchment paper on a plate or tray to demould the chocolates.
Place piping bag in the tall glass to pour melted chocolate to later fill
the bar moulds.
Watch video on how to melt and temper the chocolate. Also to get right proportions.
Fill the moulds with melted chocolate using the piping bag. Tap well to remove air bubbles. Set in the fridge (not freezer) for 20 mins.
Demould on the parchment paper.
To check if chocolate is, well set, the mould will look transparent and
the chocolate will demould easily. If not then keep for another 5 mins
to set.
Use gloves to demould and wrap chocolates. This helps to avoid
fingerprints on the chocolate and melting in case your body
temperature is high.
Demould and wrap in small batches however if you are working on
bulk orders then demould the chocolates and stack them in between
of butter paper to avoid sweating. Keep in a box in the fridge. Watch
the video to get further clarity.
Wrap the chocolate and run your fingers through it to get perfect
shaping.
