Tarragon chicken is a great way to use up chicken pieces, breast or chunks and make it taste sublime! This tarragon chicken recipe of mine has been a go to recipe, when I am wanting to use up chicken, but can't be bothered to roast, but want comfort food. Learning how to make tarragon chicken couldn't be simpler with this recipe.

This creamy chicken recipe, is lovely eaten with a range of accompaniments such as mashed potatoes, roast potatoes, pasta and even rice. This easy midweek meal uses dried tarragon, which I prefer for this dish. I find fresh tarragon a touch too pungent, whereas dried (for me) gives a better flavour. This French chicken tarragon (poultet a l'estragon) serves 2, so just double up on the ingredients for a family of four.

When cooking tarragon chicken, just make sure you have a good heavy bottomed pan, or a lidded dish like I have in the video, a link to it is in the recipe card below. Keep an eye on the heat, as cream can burn and catch, and you also want to make sure that the wine is cooked off properly too, so that flavour is mellow and not sharp.
