In 1907 a man came to Kansas City who would forever alter it’s cultural identity. His name was Henry Perry and he brought with him the secrets to delicious smoked meats. The self-proclaimed BBQ King built up several restaurants and notable disciples, Arthur Pinkard and brothers Charlie and Arthur Bryant and the cities love for bbq was born.
And while you can debate all day what area of the country has the best bbq, there’s no denying that KC has a lot of spots smoking a lot of meats. But today I’m not here to talk about ribs, or pork or chicken, I’m just here to try KC bbq’s signature dish, the burnt end, tender meat marshmallows with a crispy crust that is specific to the city that dreamt up them. Now anytime you start talking about bbq in this city you are guaranteed to make people very angry, and there’s no way I can try every single burnt end here in one day, but I’ll do my best to hit some icons and some new school favorites
