The first documented #EnglishMilkPunch (aka. #ClarifiedCocktail) recipe is from the 1600s. There are two primary reasons drinks were clarified from the outset. First, it creates a relatively shelf-stable beverage, which was an even bigger plus in an era without modern refrigeration, and second, alcohol was often much harsher in this period due to inferior fermenting and distilling practices and clarification helps soften many of those notes.
While this is something I'm still getting to know, the general gist of this whole process is taking a cocktail with a large citrus component (Whiskey Sour, Margarita, Daiquiri, etc.) and combining it with milk. When the citrus and the milk come together, the milk begins to curdle... but don't let that turn your stomach. Curdling happens during the production of things that we eat like cottage cheese. Think of Little Miss Muffet and her curds and whey.
When the curds are pulled out of suspension from the milk, they begin to leach onto things like juicy pulp and tannins from aged spirits or red wines and absorb them. When the cocktail is later strained, the curds do not pass through the straining but the whey and the rest of the cocktail do. Because these cocktails are often poured straight into a glass and served, they are also often diluted during the process, in this case by a large measure of coconut water.
Combine all ingredients below in one container, except the milk. Add the milk to a separate container and then pour the mixture into the milk. Not the milk into the mixture. For scientific reasons beyond me, this former way produces better curds. Allow it to set for at least 45 minutes. I rested mine for 12 hours. Then strain through a cheesecloth or coffee filter.
Two protips: cold or room temperature milk works but I had even better luck when I simmered the milk to ~190. Also, for an even creamier cocktail, strain the cocktail through the curds a second time.
14 oz aged rum, (e.g. Real McCoy 5-year or Plantation 5-Year)
8 oz coconut water
4 oz velvet falernum
1 oz demerara syrup (1:1, sugar:water)
4 oz pineapple juice
3 oz lime juice
6 oz whole milk
