Ingredients (in grams):
▪️65 grams unsalted butter, melted
▪️85 grams plain flour
▪️15 grams cocoa powder
▪️¼ teaspoon bicarbonate of soda
▪️¼ teaspoon salt
▪️75 grams light brown soft sugar
▪️25 grams granulated sugar
▪️1 large egg yolk, room temperature
▪️1 teaspoon vanilla extract
▪️35 grams dark chocolate chips
▪️35 grams milk chocolate chips
▪️35 grams white chocolate chips

▪️¼ cup + 1 tablespoon unsalted butter, melted
▪️½ cup all-purpose flour
▪️2 tablespoons cocoa powder
▪️¼ teaspoon baking soda
▪️¼ teaspoon salt
▪️¼ cup + 2 tablespoons light brown soft sugar
▪️2 tablespoons granulated sugar
▪️1 large egg yolk, room temperature
▪️1 teaspoon vanilla extract
▪️3 tablespoons dark chocolate chips
▪️3 tablespoons milk chocolate chips
▪️3 tablespoons white chocolate chips

Instructions:
1) Preheat your oven to 180°C (350°F) / 160°C fan. Line a large baking tray with baking paper.
2) In a medium bowl, whisk together the flour, cocoa powder, bicarbonate of soda, and salt.
3) In a separate large bowl, whisk the melted butter with both sugars until smooth and glossy.
4) Add the egg yolk and vanilla extract, then whisk until thick and creamy.
5) Add the dry ingredients to the wet ingredients and fold gently until a soft cookie dough forms.
6) Fold in the dark, milk, and white chocolate chips, reserving a few to press on top of the cookies before baking.
7) Use a 3 tablespoon size cookie scoop to divide the dough into 6 balls. Place them well spaced on the baking tray to allow for spreading.
8) Bake for 10-12 minutes. The edges should look set while the centres remain soft.
9) Leave the cookies to cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.
