This Gingerbread Cake Roll with Eggnog Cream is the perfect blend of Christmas sweet and spice!
Welcome back to our Christmas baking series! Today's recipe is definitely one you should consider making, especially if you want to impress your friends! It's a little time consuming, but nothing about it is really hard at all.
You can do this!
CAKE
¾ cup unbleached cake flour
1½ teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon baking powder
½ teaspoon ground allspice
½ teaspoon ground nutmeg
¼ teaspoon baking soda
¼ teaspoon kosher salt
5 large eggs, separated
¼ cup sugar
½ cup molasses (not blackstrap)
¼ cup packed dark brown sugar
2 tablespoons grated fresh ginger
½ cup powdered sugar, divided
FILLING
1 (8-oz.) pkg. room temp cream cheese
6 tablespoons room temp butter
1 cup powdered sugar
2 tablespoons rum
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg or mace
EGGNOG CREAM
2 cups cold heavy cream
1 cup cold eggnog
1 tablespoon rum
½ teaspoon nutmeg
