Upside-Down Apple Cake: This Delightful Apple Cinnamon Cake is soft, moist, and perfect for breakfast or served as a dessert with vanilla sauce.

Recipe (Servings 8-10)
Ingredients:
1 Big or 2 little Apples (Gala or similar)
1/2 cup (100 g) Softened unsalted butter
Zest from 1 lemon and set aside the juice from half of the lemon
3 medium eggs (room temperature)
1/4 cup (50 ml) of Milk
2 cups (250 g) of all-purpose flour
1 and 1/2 teaspoons of baking powder
A good pinch of salt
3/4 cup (150 g) of granulated sugar
1/3 cup and 1 tablespoon (100 g) of applesauce
Topping:
3 tablespoons (45 g) Softened unsalted butter
3 tablespoons of brown sugar
1 teaspoon of ground cinnamon
Directions:
Zest lemon using a Microplane and set aside.
Peel, core, and slice the apple (1/5-inch - 5mm). Cover the sliced apple with lemon juice and 100 ml of water and set aside.
Preheat the oven to 350°F (175°C) and set an oven rack in the last bottom position.
Grease and flour an 8-inch (20 cm) springform cake pan.
Combine the flour, baking powder, and salt in a small bowl. Sift, whisk and set aside.
In a large bowl whisk the butter and sugar until light and fluffy with an electric mixer.
Add one egg at the time and beat until smooth then add the lemon zest.
Add half of the flour mixture and whisk to combine. Add the milk, mix then and the applesauce and whisk it again. Blend in the remaining flour.
Topping:
Mix 3 tablespoons (45 g) of softened butter with the brown sugar and the ground cinnamon until creamy.
Spread the cinnamon cream into the prepared cake pan and layer apples sliced on top.
Pour the batter over the apples and spread evenly.
Bake in the lower part of the oven for about 45 minutes. Do the toothpick test, if it comes out clean, the cake is done.
Transfer the pan to a rack and let cool for 20- 30 minutes. Run an offset spatula or a knife around the inside rim of the pan. Center a serving plate over the cake; carefully invert the cake and plate.
Let cool completely before serving. Optional: Serve with vanilla sauce.
