Ingredients
1.Milk 1 ltr( bufflolo milk) full cream
2.wheat flour 1cup+ 1/2 tsp salt+ 1tsp sugar+2 table samolina + 2 tsp oil
3. Chopped Almonds pistachio abt 1/4 cup
4.Saffron 8 to 10 threads in 1/4 cup milk
5.Nutmeg and green cardamom powder abt 1/2 tsp
6.Oil about 2 cup
Method
Boil the milk cool down and place the container in refrigerator till a thick cream is formed (these are previous day preparation).Remove the cream from the milk in a seperate dish and preserve it.Heat the milk to luke warm temperature and add about 1 table spn curds and stir well.Allow to form thick curd.
Place a while clean white cloth on a strainer and place the strainer on a container. Pour the curds on a cloth & Allow the water to drain. Knead the dough to soft consistency and allow it to mature by placing in a container with lid.
Remove the remaining water from the curd by squeezing and twisting the cloth so that the curds becomes thick curd.place the thick curds in a container by measuring it. Add abt same measure powdered sugar to it.stir it well.Add the cream which was preserved along with saffron milk and pinch of salt. Further stir it to smooth creamy Shreekhand, Add nuts and cardamom powder and stir it well. Keep some nuts to garnish.If the Shreekhand. Consistency is thick then add about 2 table spn milk and stir it. Place in a bowl and decorate with remaining dry fruits Shreekhand is ready
The dough is well matured divide the dough into puree size balls and make puree
Heat kadhai on a gas, add oil ,allow the iol to heat.Lower the flame to medium slow and fry all the purees, all would be fluffy and soft. The puree are also ready, Tastes delicious with creamy shreekhand
