My Favorite Lemon Pound Cake Recipe
Hey everyone! Welcome or welcome back to The Food Binder! This video is finally out, and thank you so much for being patient! Many people have different recipes and ways to make lemon pound cake, and today I’m going to show you how I make my favorite lemon pound cake! Additionally, I’ll be sharing my tips and tricks! (Be sure to always look for a “Notes” section in the description box because that’s where I mainly put them.) As a side note, Fall/Autumn just started (yay)! I filmed this video right before it began, so this is the last “summery” recipe I’ll be sharing this year. I'm so excited to start sharing my favorite Fall recipes! Also, I promise I’ll have some more savory recipes soon! If you have any recipe requests, comment them down below!
Ingredients:
3 cups All-Purpose flour
½ tsp baking soda
½ tsp salt
1 cup buttermilk
2 tbsp lemon zest
2 tbsp fresh lemon juice
1 cup butter (2 sticks), softened
2 ¼ cups cane sugar
3 large eggs
Optional Lemon Syrup:
2 tbsp water
2 tbsp sugar
1 tbsp lemon juice
Optional: Lemon Glaze:
1 cup powdered sugar
2 Tbsp fresh lemon juice
Directions:
1. Preheat the oven to 325F.
2. In a medium bowl, sift together the flour, baking soda, and salt. Then, set that aside.
3. In a measuring cup, mix together the buttermilk, lemon zest, and lemon juice. Set that aside.
4. In another bowl, cream together the room temperature butter with the sugar for 5 minutes. It should look pretty fluffy. For this recipe, you can use either a hand mixer (beaters) or a stand mixer (paddle attachment). Make sure to scrape down the bowl as needed.
5. Next, mix in the eggs one at a time, scraping the bowl after each egg.
With the mixer on LOW speed, mix in a ¼ of the flour mixture until it is just incorporated. Scrape the bowl, then mix in ⅓ of the buttermilk mixture.
6. Repeat step 5 until all the buttermilk and flour mixture is incorporated into the batter. Make sure to scrape down the bowl every time! The batter should look luscious and thick.
7. Now, in a standard loaf pan (9x5) lined with parchment paper, pour in the batter. If you have leftover batter, you can put them into cupcake tins.
8. Bake the pound cake for 75 - 90 minutes or until it is golden brown, and a toothpick comes out clean. For the leftover batter, bake it for 20-25 minutes.
9. Cool the pound cake in the pan for 5 minutes, then take it out onto a cooling rack. (Don’t leave it in the pan because the leftover heat will continue to cook the pound cake )
Optional:
10. While the pound cake is cooling, let’s make the lemon syrup, combine all the ingredients in a saucepan, and bring it to a boil. Take it off the heat once the sugar has fully dissolved.
11. While the pound cake is still warm, brush it with the lemon syrup.
12. Now, whisk together the powdered sugar and the lemon juice to make the glaze.
13. Drizzle/pour on the lemon glaze
14. Chill in the fridge for 5 minutes so that the glaze sets.
15. Slice and enjoy!

*Always make sure to use room temperature ingredients unless specified for something else!
*I recommend using fresh lemons for this recipe! This recipe should only take around 2 large lemons and fresh lemons are a lot better than the bottled or canned stuff. Trust me, it makes a difference!
*Buttermilk Substitute:
1 cup of milk (whole milk works the best)
1 tbsp of lemon juice (or white vinegar)
Mix these 2 ingredients together and let it sit for 5 minutes until you use it!
*I have not tested reducing the sugar, but if you do want to reduce it, I would recommend only going as low as 1 1/2 cups! Let me know if you do reduce the sugar and how it turned out!
