Описание:
1. Baati (Wheat Dumplings)
Ingredients:
Whole wheat flour – 2 cups
Sooji (semolina) – ¼ cup
Ghee – ¼ cup (plus more for soaking)
Salt – ½ tsp
Baking soda – a pinch (optional)
Water – as needed
Method:
In a large bowl, mix flour, sooji, salt, and ghee.
Rub the mixture between your palms till it becomes crumbly (it should hold shape when pressed).
Add water gradually to make a stiff dough.
Divide into medium-sized balls (baatis). Flatten slightly and make a small cross-mark on top.
Traditional method: Bake in a tandoor or over cow-dung cakes till golden and crisp.
Modern method: Bake in a preheated oven at 200°C (390°F) for 25–30 minutes, flipping halfway.
Once done, dip the hot baatis in melted ghee and keep aside.
🥣 2. Daal (Mixed Lentil Curry)
Ingredients:
Toor dal – ¼ cup
Chana dal – ¼ cup
Moong dal – ¼ cup
Masoor dal – 2 tbsp
Urad dal – 2 tbsp
Ghee – 2 tbsp
Onion – 1 medium (chopped)
Tomato – 1 medium (chopped)
Ginger-garlic paste – 1 tsp
Green chilies – 1–2 (slit)
Turmeric – ½ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin seeds – 1 tsp
Asafoetida (hing) – a pinch
Salt – to taste
Lemon juice & chopped coriander – for garnish
Method:
Wash and soak all dals together for 30 minutes.
Pressure cook with turmeric and salt till soft (2–3 whistles). Mash slightly.
For tempering, heat ghee in a pan. Add cumin seeds and hing.
Add onions and sauté till golden brown.
Add ginger-garlic paste, chilies, and tomatoes; cook till soft.
Add chili powder, coriander powder, and the cooked dal. Adjust water for desired consistency.
Simmer 5–10 minutes. Garnish with coriander and lemon juice.
🍯 3. Churma (Sweet Crumbled Baati)
Ingredients:
Coarsely ground wheat flour – 1 cup
Ghee – ¼ cup (plus extra for frying)
Jaggery or sugar – ½ cup (adjust to taste)
Cardamom powder – ½ tsp
Chopped nuts – 2 tbsp (almonds, cashews, pistachios)
Method:
Mix flour with ghee and little water to make a stiff dough.
Shape into small muthiyas (oval balls) and bake/fry till golden brown.
Once cooled, crush or grind coarsely.
Melt jaggery (or sugar) with a little ghee; mix into the crushed mixture.
Add cardamom and nuts. Mix well.
🍽️ Serving Suggestion:
Serve hot daal in a bowl with baatis drenched in ghee and a side of churma.
Traditionally enjoyed by breaking baati into pieces, pouring daal over it, and finishing with a bite of sweet churma.
