Easy Beef Skillet Shepherd's Pie

This recipe is a hand-me down from my mom. She made it often growing up, and we always called it Shepherd's Pie. It's the perfect way to use a pound of ground beef and whip up supper in a giffy! INGREDIENTS:
1 pound ground beef
1 small onion, diced
1 can cream of mushroom soup
1 can Veg-Alls (or peas & carrots, mixed veggies or 1 cup frozen mixed veggies or any assortment of leftover veggies)
Mashed Potatoes (enough to cover top of dish - perfect use for leftover mashed potatoes)
Shredded Cheese

DIRECTIONS:
Brown ground beef and onion in skillet, drain
Mix soup and veggies with beef mixture
Top with mashed potatoes and then cheese
Bake at 350 degrees until bubbly on sides and cheese is melted
