▷Bake Cheese Pie
Pie pan : 6 inch (15cm )
▷Ingredients
‣Pie Crest
75g . . . Plain flour
15g . . . Almond powder
28g . . . Icing sugar
0.5g . . . Salt
45g . . . Cold unsalted butter
22g . . . Whole egg
‣Cheese Filling
145g . . Cream cheese
2g . . . . Corn starch
26g . . . Sugar
60g . . . Whipping cream
55g . . . Milk
2g . . . . Vanilla extract
2g . . . . Lemon juice
‣Egg Wash(for brushing on top of cheese filling)
1 Egg yolk
3g . . . . Milk
2g . . . . Icing sugar
▷Cook Time
‣Pie crest : Bake it at 360°F/180°C for 12-15 minutes, remove the aluminum foil and pie weights, and bake it at 320°F/160°C for 5-8 minutes.
‣Bake cheese pie : Bake it at 320°F/160°C for 12-15 minutes, adjust the temperature to 390°F /200°C and continue bake for 6-10min. ( you can adjust the baking time and bake it half-boiled or fully cooked according to your taste)
▷Storage
Bake cheese pie will keep in the fridge for up to 4 days.
